This style of sparkling wine, often referred to as a Pét Nat, is produced by bottling the fermenting juice with a small amount of residual sugar. The carbon dioxide produced by the last bit of fermentation is trapped, producing a sparkling wine. This wine was not disgorged, meaning we did not allow the yeast to settle in the neck and expel it from the bottle. This leaves heavy sediment in the bottom that continues to influence the texture and flavor of the wine, and can be enjoyed with the yeast settled or stirred into solution. This casual sipper showcases juicy notes of strawberry, pomegranate, baked bread, and mineral.
